Some might think I’m a little crazy to spend an entire afternoon baking in the middle of summer. Well, some things just need to be done!
My Saturday started the usual way, with open-faced sandwiches for breakfast. I had a leftover avocado half in my fridge that needed to be used up, so I simply mashed it with a little salt and lemon juice and put it on a slice of toast. Best idea ever!
Remember the lentil stew from my last post? I made a huge batch and have been eating leftovers for days. And there’s another serving in my freezer. It tastes great with millet and pickled greens.
I’m currently trying to clear out my pantry. There are so many strange things hiding in there, it’s a little insane. Among other things, I found half a bag of whole-grain bread baking mix. So I whipped up a loaf. It was ridiculously easy. And also delicious. And almost gone. Oops. My taste test was also my mid-afternoon snack, a slice of fresh bread with hummus and ajvar.
My husband and I were watching a cooking show, where the host made a berry meringue cake. It looked really good. And so my husband spontaneously decided to bake a similar cake, just because. His creation was actually quite tasty, but also ugly. The meringue topping was too runny and didn’t really set, I guess because the strawberries released some moisture. We’ll work on that one.
Dinner was another bowl of bibimbap, a family favorite. I know, I post this dish almost every week, but it’s just so good! And versatile! I admit I’m a little addicted to those black soy beans, so I use every chance I get to shovel them into my mouth.
