Here’s a recipe for the coconut lovers out there. These little bits are crunchy, light and totally delicious.
Here’s what you need:
- 2 egg whites
- 1 dash of salt
- 100 g confectioners’ sugar
- 150 g shredded coconut, unsweetened
- lemon zest (from 1 lemon)
Whisk egg whites and salt with a mixer until soft peaks form. Add sugar and whisk on low speed. Then carefully fold in shredded coconut and lemon zest.
Optional step: Melt some dark chocolate and spread it on the bottom of the macaroons. Place on tin foil and let them cool.
