Finally here it is, the recipe I promised. It is one of my favourite go-to dishes, Korean Fried Rice! This dish is very easy, fast and versatile, exactly how I like my meals.
Here’s what you need:
- 1 egg
- 1/2 cup carrots, chopped
- 1 1/2 cup mushrooms, chopped
- 1 cup zucchini, chopped
- 2 green onions
- 1/4 cup kimchi, chopped (optional)
- 1/2 tsp red pepper paste (Gochujang)
- 1 tsp sugar
- salt, pepper, soy sauce, roasted sesame oil, roasted sesame seeds
Crack the egg into a small bowl, add a pinch of salt and beat lightly. Heat up a large frying pan and add a little oil (e.g. canola oil). Pour in the beaten egg and spread it around the bottom of the pan. Break up the egg rapidly as if making scrambled eggs. When the eggs are nearly set, take them out of the pan, clean off the pan with a paper towel, and add a little fresh oil.
Put the pan back on the heat, add your chopped vegetables and let them cook over high heat for a few minutes while stirring occasionally. Add kimchi and gochujang, if you like, and keep stirring. Now I highly recommend to open all your windows, because fried kimchi SMELLS!
Put in the rice and spread it thoroughly, then let it sit for a few seconds until it forms a slight crust on the bottom. Scrape it off, stir some more, add the scrambled egg, and season to taste with soy sauce, sugar, salt, pepper and sesame oil (only a few drops, a little goes a long way!).
Your Fried Rice is ready to serve! You can sprinkle some roasted sesame seeds and chopped chives or green onions on top, if you like.
Though the kimchi is optional, I highly recommend using it, because it adds a very special flavour to the dish.
So, where can I get kimchi? If you are lucky to have a Korean grocery store near you, you might find some fresh kimchi there. Don’t use canned kimchi, it’s just not the same!
You can also make your own kimchi, it’s easier than you might think! Maangchi has a great kimchi recipe, I’ve already tried it and it’s really delicious! It may look like a lot of work, but you only have to go through it once, and you will have kimchi for many weeks. And of course you don’t have to use 10 pounds of cabbage! 😉
