These are not exactly like the cookies my grandma used to make, but close enough, I guess. These cookies are fruity, sweet, and so soft, they will melt in your mouth. Absolutely!
Here’s what you need:
- 125 g butter
- 100 g sugar
- 2 egg yolks
- 100 g ground hazelnuts (or almonds)
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 200 g wheat flour
- some jam or jelly (red/black currant, apricot, raspberry, etc.)
Cream butter and sugar together, add the egg yolks and mix until everything is well combined. Now add the dry ingredients. Mix until just combined. I suggest using your hands for this part. Shape the dough into a ball and cover with plastic wrap. Put into the fridge for at least one hour, up to one day.
Preheat the oven to 320° F. Take out about half of the dough, carefully roll it out on a flour-covered surface and punch out circles with a cookie cutter. If you don’t have one, a narrow glass will do, too. Bake the circles for about 10 minutes or until the edges turn slightly brown.
Take out the rest of the cookie dough, roll it out and punch out circles with a small hole in the center, to form rings. Bake the rings for about 8 minutes.
When the cookies have cooled completely, dust powered sugar onto the rings. Smear a thin layer of raspberry jam on the bottom of the cookie circles and put the rings on top.
